Sunflowers were revered by the Aztecs 600 years ago in their temples of the sun and are thought to be the first cultivated crop in North America - before corn. The Indians used all parts of the flower - seeds were ground or eaten whole, oil from the seeds were used in cooking, and on skin and hair. The dried stalk was used as a building material. Leaves were used in herbal remedies. Sunflowers are commonly grown for their oil and seeds which are high in essential fatty acids.
